Since the 16th century, Château d’Yquem, a 113-hectare estate in Sauternes, Bordeaux, has been known for its late-harvest wines. Due to botrytization, the estate utilises just 25% of Sauvignon Blanc and 75% of Semillon grapes. Three or four presses are used to extract concentrated, sweet flavours from grapes. Before combining, the fermented product is matured for six to eight months in freshly seasoned oak barrels.
